I recently bought an aebleskiver pan. All the recipes I have seen have called for whipped egg whites and I am not sure how to replicate the effect of that with vegan ingredients. Does have a recipe they are willing to share?

Grünkern is a lovely thing popular in the German-speaking world. It's spelt/farro that's been harvested young (thus the "green" in the name) and then smoked. If you have ready access to Grünkern, by all means use it for this (and send me a package, please, since I just used the last of mine). I have discovered a jar of sauerkraut, bought a while ago in a 'ooh, that looks interesting' moment. I've got no idea what to do with it - googling brings up a lot of things that involve pork. Would serving it with onion gravy and potatoes be a good idea?

Like the rest of their recipes, it involves multiple pieces to make the dish which is called Tempeh Sauerbrauten Style with Braised Red Cabbage and Apples and Spatzle. My Dutch fiance taught me how to make these a few months ago when he was here, and I kind of forgot about them until this morning when I went to go make breakfast.
